Three Numbers That Are Not Ours to Give
There is an obvious way to make this site feel more useful and it would make it less so.
The short form
Three numbers are not ours to give. The grease limit is written by your control authority. The pumping interval is local where it is fixed at all, and otherwise depends on loading. The device size is a design calculation at plan review. EPA’s own local-limit examples span a twelve-fold range.

The grease limit
Set by your control authority in its sewer use ordinance, under the federal requirement that each POTW develop and enforce its own specific limits. EPA’s own examples span 50 to 600 milligrams per liter.
A number printed here would be one city’s, and you would have no way of knowing which. Where yours comes from.

The pumping interval
Set locally where it is fixed at all, and otherwise a function of the vessel, the menu and the loading. We would be guessing on all four, and the guess would be something to point at in a conversation where it carries no weight.
